BIOGRAPHY
The
Di Meo family have been restaurateurs for three generations. Thanks
to leading chef and owner Salvatore’s passion for gastronomy,
the original family restaurant, "La Misenetta," earned
a reputation as one of Italy's finest restaurants.
Salvatore is acknowledged as one of Italy’ s most accomplished
and original chefs. In his kitchen cooking becomes a blend of creativity
and passion, as he continuously experiments with new flavours and
ideas.
Salvatore is a master chef who constantly conceptualises dishes
that he then produces in the kitchen. He can imagine the flavour
of a finished dish just from the scent of the raw ingredients.
Each morning he buys the freshest seasonal produce at the local
market selecting the best fish, fruit and vegetables as he believes
that the success of a dish depends greatly on the quality of its
raw ingredients.
Although always attentive to the natural evolution of gastronomy
throughout the world, he does not succumb to excessive modernizations
or passing fashions, but firmly preserves the roots of his mediterraneann
culture.
For many years Salvatore has been in charge of cooking classes at
the French Cultural Institute of Naples.
He is a very active promotor of gastronomic events such as "Futuro
Remote: encounters between the evolution of modern architecture
and gastronomic trends".
In 1994, he was nominated Head Chef of the G7 meeting held in Naples.
Salvatore and his team spent six months preparing this event, receiving
outstanding results: the plaudits of all 7 Presidents and compliments
from all critics.
From 1996 to 2003 Salvatore has been in charge of running the restaurant
and catering activities of the prestigious Yacht Club Costa Smeralda
of Portocervo in Sardinia, founded and presided by Prince Aga Khan
.
Salvatore is also the gastronomic consultant to many prestigious
food magazines and catering companies, and is author of the acclaimed
cook book "Le ricette del sole" published by Mondadori
.
In 2003, Salvatore and his team, opened a new restaurant in Portocervo,
"La cucina del Sole", where the cheerful Capri spirit
perfectly captures the sunny Sardinian atmosphere.
"La cucina del Sole" has already become a major destination
for all gourmets exploring the mediterranean shores.
